Meet the Brewers
All of our beers are brewed right here, on-site at CooperSmith’s, and our brewery team is passionate about experimenting with traditional brewing styles and new modern flavors to craft tastes that will keep you on your toes (but don’t worry, we keep taps open for the staples).
Jimmy Goering
Brewer

Jimmy grew up in Colorado Springs, and after graduating high school in 2019, moved to Fort Collins to attend CSU. He is studying Fermentation Science and Technology and plans to complete his degree in the spring of 2023. Jimmy’s interest in the beer industry and the fermentation process stemmed from watching his father’s home brewing process. That same inspiration encouraged Jimmy to experiment with crafting home brews of his own. Jimmy joined the Coopersmith’s team in early 2021 as a kitchen staff member and started working with the brewing team in February of 2022 cleaning tanks and kegs. When he isn’t helping to create Coopersmith’s amazing beers, Jimmy enjoys climbing in the Poudre Canyon or in Vedauwoo, WY with his friends.
Chris McCombs
Head Brewer

Chris has worked in the Craft Brewing industry for over 26 years. His previous brewery gigs include New Belgium Brewing Co., Red Rock Brewing Co., and Kettlehouse Brewing Co. Chris has developed and collaborated on several award-winning brews, judged at the Great American Beer Festival, and spoken at the 2018 Craft Brewers Conference. When he’s not brewing, he enjoys mountain biking, playing guitar (power chords mostly), and hanging out with his family in beautiful Ft. Collins, CO, USA.
Dwight Hall
President, Auxiliary Brewer

Dwight grew up in Fort Collins and has raised his family here. He started at CooperSmith’s during construction in 1989, and for the last three decades since then, he and the team have been serving up warm hospitality and cold pints. He helped get the kitchen open and then moved into the brewery. Starting out washing kegs and tanks, his skills grew and in 1995 he took over as head brewer. In 2014 Dwight along with managers Sandra Longton and Chris O’mara bought out the founders of the company. He is now president and is primarily focused on running the business but still loves to brew when Chris and Jimmy will let him.
